Easy Homemade Granola


-2 cups chopped nuts- I use walnuts and pecans

- 8 ounces coconut chips

-2 cups oatmeal- I use old fashioned oats

-½ cup honey

-¾ cup melted coconut oil

-¼ teaspoon salt

-option to add 1 cup dried fruit- blueberries, golden raisins or apricots


  1. Preheat the oven to 350 degrees.

  2. In a large saucepan melt coconut oil on low heat.

  3. Stir in the honey and salt.

  4. Add the chopped nuts, coconut chips and oatmeal.

  5. Spread the mixture in an even layer in a 9” by 13” glass pan.

  6. Bake for 30 minutes, stirring halfway through.

  7. Once finish- let it cool for 15 minutes.

Enjoy! This is really easy to make. I love granola and it makes for a great snack. You can top your yogurt with it too!
